Tomato Soup with Quinoa & Feta

Happy New Year!

I’ve been traveling, busy working and just getting back into the groove of all things related to LIFE.

This was a great soup to make, especially when my husband woke up yesterday morning with a sore throat. I made the quinoa in the am and then put the soup together when I came home from work, total of about 40 min with chopping, simmering and blending. It was velvety, smooth and delicious! Even my 5 year old ate it with extra parmesan cheese instead of feta and said it tasted like pasta sauce. 2 year old didn’t even attempt to try it. (Can’t win them all!)

I will admit I added 3 carrots instead of 2 just for fun.

  2. Hi Lauren, I sometimes take a small piece of sourdough bread, brush it with olive oil and bake it a few minutes, then smear a little goat cheese on it and bake it some more. The little toast will float on the tomato soup and it is beautiful. Would look great with this recipe!
